baked sweet potatoes on tahini soy yoghurt
Ingredients
For the baked potatoes:
- 2-3 sweet potatoes
- 4 tbsp. native olive oil*
- 2 tbsp. maple syrup*
- ½ tsp chili flakes*
- ½ tsp Cumin*
- kosher salt*
- Pepper*
For the tahini soy yoghurt sauce:
- 200 G soy yoghurt
- 2 tbsp. tahini
- juice of half a lemon
- 1 clove of garlic
- kosher salt*
- Pepper*
For the set
- 1 spring onion
- 1 Chili, pepperoni… to taste
- zest of half a lemon
- small bunch of mint or lemon balm
- small Bunch of coriander or parsley
- black sesame*
- pistachios*
Instructions
- Preheat the oven to 200°C and line a baking tray with baking paper.
- Peel the sweet potatoes and cut into 2×2 cm pieces.
- Mix in the olive oil, maple syrup and spices.
- Spread the potatoes out on the parchment paper and bake for 25-30 minutes.
- In the meantime, peel and finely grate the garlic.
- Mix the soy yoghurt with tahini, lemon juice and garlic. Season with salt and pepper and refrigerate.
- Wash the spring onion and the chili and cut into fine rings.
- Wash herbs, shake dry and chop coarsely.
Arranging and serving:
- Spread the yoghurt on a plate or in a bowl.
- Arrange the baked potatoes on the tahini yoghurt. Sprinkle with sesame, pistachios, spring onions, pepperoni, lemon zest and garnish with herbs.
- Serve and enjoy.
