It’s delicious, fresh and tasty, our first soup this fall. Finally soup weather again and we start this soup season with a creamy vegan exotic sweet potato and kohlrabi soup.
Kohlrabi?
Yes, kohlrabi is a versatile vegetable and packed with vitamin C! We love this vegetable. The texture is perhaps most comparable to a nice crunchy apple, but the flavor is like a milder, juicier broccoli. You can eat kohlrabi either raw or cooked. I love kohlrabi as a stew, kohlrabi fries, kohlrabi risotto, but also breaded and fried as a vegan schnitzel. Or simply cut into bite-sized pieces or sticks for a fresh, crunchy snack.
Sweet potato!
Little fat but lots of vitamins. They also contain many minerals and vitamins. The beta-carotene in orange sweet potatoes is almost as high as in carrots. What is Beta Carotene? Our body converts beta-carotene into vitamin A, which has a cell-protecting effect and strengthens our immune system.

The amazing health benefits of carrots are: It relaxes blood vessels, making it easier for your heart to work. Carrots are high in beta-carotene, as we discussed with sweet potatoes, and in vitamin C, which your body benefits from and can better protect you from disease. Vitamin C also protects against the “harmful” effects of aging.
Garnish options
The soup is great on its own, but the exotic sweet potato and kohlrabi soup tastes especially good garnished with toasted coconut flakes and wasabi sesame seeds. This soup could use a variety of garnishing and serving ideas. You can also use a delicious coriander pesto , chilli threads, chilli rings, fresh coriander greens, roasted almonds or nuts as a garnish.
storage
Like most soups, Exotic Sweet Potato and Turnip Green Soup will keep in the fridge for a few days, making it a great appetizer or a full-on weekday lunch or dinner.

exotic sweet potato kohlrabi soup
Ingredients
- 1 sweet potato big
- 2 Kohlrabi
- 3 carrots
- 1 Onion
- 3 clove of garlic
- 4 lemongrass*
- 1 chili peppers*
- 30 G fresh ginger*
- 2 tbsp. coconut oil* or vegetable oil
- 1 tsp madras curry*
- 1 tsp Turmeric*
- 500 ml vegetable broth
- 400 ml coconut milk*
- Juice of half a lime
- 2 tbsp. soy sauce
- kosher salt*
- Black pepper*
Instructions
- Clean the kohlrabi, remove the shell and roughly dice.
- Peel the carrots and sweet potato and also cut into cubes.
- Peel and finely dice the garlic and onion.
- Peel and finely dice the ginger.
- Deseed the chili.
- Remove the dry outer leaves from the lemongrass and crush with a knife until the stalk breaks open.
- Heat coconut oil in a saucepan. Sauté onions in it until translucent. Add the garlic, lemongrass, ginger, curry powder and turmeric and fry briefly.
- Add the diced vegetables and fry for about 3 minutes .
- Now deglaze with vegetable broth so that the vegetables are just covered. Cook uncovered for 25 minutes or until vegetables are tender. Finely puree the soup with a hand blender.
- Stir in coconut milk until soup has desired consistency.
- Squeeze lime.
- Season to taste with lime juice, soy sauce, salt and pepper from the mill.
