for the salad you need:
- 200 G arugula
- 2 avocado
- 2 mango ripe
- 200 G Mini mozzarella balls
- 4 tbsp. Cashews*
- 1 small Bunch of Thai basil
for dressing you need:
- 1 juice of an orange
- 2 tbsp. native olive oil*
- 2 tbsp. white balsamic vinegar*
- 1 tsp Dijon mustard*
- 3 tsp maple syrup*
- kosher salt*
- Pepper*
InstructionsÂ
Preparations:
- Sort the rocket salad, wash and drain or spin dry well. Cut off particularly thick and long stems (they are usually quite bitter).
- Roast the cashew nuts in a pan without adding fat until golden brown. Set aside and let cool.
- Peel the mangoes, cut the flesh from the pit and cut into slices or cubes.
- Halve the avocado, deseed, peel off and also cut into slices or cubes.
- Take the mozzarella balls out of the brine and let them drain in a colander.
Prepare the orange dressing:
- Whisk together the orange juice, olive oil, white balsamic vinegar, Dijon mustard and maple syrup. Season with salt and pepper to your taste.
