Gözleme – the delicious Turkish flatbread
Ingredients
Gozleme dough:
- 350 grams wheat flour
- ½ tsp salt
- 1 pinch of sugar
- 1½ tsp olive oil or other vegetable oil
- 200 ml water or milk
- flour for rolling
Cheese and Spinach Filling:
- 150 grams baby spinach
- 2 spring onions
- 200 grams vegan cheese* or feta
- ¼ tsp chilli flakes
Potato Filling:
- 150 grams potatoes
- 1 Onion
- 2 tbsp. olive oil
- small bunch parsley
- ½ tsp sweet paprika
- 4 leaves mint
- 1 tsp chilli flakes
- Black pepper from the mill
- Salt
Onion Filling:
- 200 grams Onion
- 2 tbsp. olive oil
- small bunch parsley
- ¼ tsp chilli flakes
- black pepper from the mill
- Salt
Instructions
To make dough:
- For the dough, simply knead the flour with a pinch of sugar, salt and olive oil in your food processor into a smooth dough. Add the water in small amounts and knead until the dough is no longer sticky.
- Cover and let rest for about 30 minutes.
- In the meantime prepare the filling. The dough is enough for about 8 gözleme. Likewise they quantities of the different fillings.
Spinach Cheese Filling:
- Wash the spinach, spin dry and roughly chop.
- Wash the spring onions and cut into fine rings.
- Roughly crumble or finely chop the vegan cheese.
- In a bowl, mix the spinach, spring onion, cheese and red chili flakes. Squeeze the spinach leaves well to soften them. set aside.
Potato Filling:
- Boil the potatoes until soft, peel and cut into small pieces.
- Peel the onions and cut into very thin strips.
- Rinse the parsley and mint and shake dry. Then finely chop.
- Fry the onions in a pan with a little oil. Add the diced potatoes and fry for a few minutes. Place the mixture in a bowl and stir in the chopped herbs, chilli flakes, salt and pepper. Put aside.
Onion Filling:
- Rinse the parsley and shake dry. Then finely chop.
- Peel the onions and cut into very thin strips.
- Fry the onions in a pan with a little oil. Place the fried onions in a bowl and mix in the chopped herbs, chili flakes, salt and pepper. Put aside.
Roll out Gözleme, fill and bake in the pan:
- Stretch out the dough a little, cut in half, then cut in half again and then cut in half again to make about 8 even pieces.
- Shape the dough into 8 balls and cover with a clean kitchen towel until ready to use.
- Using a rolling pin, roll out the dough balls as thin as possible on a floured work surface. Turn every now and then to create round flat cakes. Dust with a little flour from time to time.
- Cover half of the flatbread with your filling, fold over and press the edges together well. If necessary, moisten the edges with a little water beforehand.
- Bake the filled Gözleme in a coated pan without adding any fat for 2 to 4 minutes on each side.
- Brush with a little melted butter (or margarine), serve warm and enjoy.
