Kimchi pancake – Kimchijeon – 김치전 – with spelled flour
- 500 g vegan kimchi >> Recipe link
- 4 tbsp. kimchi brine
- 5 spring onions
- 1 clove garlic
- 1 tsp. sugar
- 120 g spelled flour* or wheat flour
- 150 ml water +/-
- 4 – 6 tbsp. vegetable oil
- Spring onions in fine rings
- small Bunch of coriander roughly chopped
- Okonomi Sauce* our favourite
- Sriracha Mayoo*
- Cut coarse kimchi into smaller pieces.
- Wash the spring onions and cut into fine rings.
- Peel and finely chop or grate the garlic.
- Combine kimchi, kimchi brine, scallions, garlic, sugar, flour, and water in a mixing bowl.
- Heat 2 tablespoons vegetable oil in a nonstick skillet (10-12 inches) over medium-high heat.
- Pour half of the batter into the pan and smooth out. This works well with a spoon or kitchen spatula.
- Fry for 3 to 5 minutes until brown and crispy. Turn the pancakes and add about 1 to 2 tablespoons of oil if necessary.
- Cook for another 3 to 5 minutes until desired browning and crispiness is achieved.
- Serve on plates and enjoy immediately with your choice of topping.
