for the banana bread:

  • 200 G spelled flour*
  • 1 pack baking powder
  • ½ tsp kosher salt*
  • 45 G cocoa powder
  • 60 ml vegetable oil
  • 80 ml plant-based milk eg soy vanilla
  • 50 G sugar or maple syrup
  • 1 tsp vanilla extract*
  • 3-4 bananas very ripe

Topping (optional):

  • maple syrup* for brushing
  • chocolate chips chocolate drops
  • banana pieces with baked


  • Preheat the oven to 180 °C top and bottom heat.
  • Grease the loaf tin lightly or line it with baking paper.
  • In a large mixing bowl or in your food processor, combine all dry ingredients such as flour, baking powder, cocoa powder and salt and mix.
  • In another bowl, combine vegetable oil, non-dairy milk (I like to use vanilla soy milk for even more vanilla flavor) and sugar and mix with a whisk.
  • Peel the bananas and mash well with a fork.
  • Slowly stir the liquid ingredients into the dry ingredients and add the mashed bananas. Mix everything to a smooth dough.
  • Put the dough in the prepared form. For example, sprinkle with chocolate chips and bake in a hot oven for 40 to 50 minutes.
