Ingredients
  

for the tofu puffs you need:

  • 300 g fresh tofu
  • neutral vegetable oil for frying

Here’s a delicious dip if you want to eat the crispy tofu puffs right away:

  • 1 clove garlic
  • 1 spring onion
  • 1 tablespoon light soy sauce*
  • ½ tablespoon dark soy sauce*
  • 1 teaspoon hoisin sauce
  • 1 tablespoon water

Instructions
 

  • Drain the liquid from the tofu. Then cut the tofu into cubes of about 2 cm.
  • Drain tofu cubes on kitchen paper and pat to remove moisture.
  • Heat the cooking oil in a pot or pan (preferably with a thick bottom). When your cubes are 2 cm thick, add about 2.5 cm of oil to the pan. Heat the oil to around 180°C. (see tip)
  • If you have a deep fryer, use it for this recipe.
  • Place tofu cubes on a slotted spoon and carefully slide into hot oil.
  • Fry in portions so that the tofu cubes can swim well in the pot. If you put in too much, the temperature of the oil will be too low, which can cause a lot of bubbles, causing the oil to overflow.
  • As soon as the tofu cubes float to the surface, toss them carefully from time to time so that all sides of the tofu are golden and crispy. After about 10-12 minutes, when all sides are golden and puffy, they’re done.
  • Scoop the puffed tofu cubes out of the hot oil and place on a plate lined with paper towels to drain excess oil.
  • Serve immediately with dip or use for other dishes.

quick soy dip:

  • Peel and finely chop or grate the garlic.
  • Wash the spring onions and cut the green into fine rings. Put the white aside for something else.
  • Now whisk all the ingredients together in a small bowl.

Notes

Which oil to fry?

Choose an oil with a high smoke point such as vegetable oil, peanut oil, avocado oil, or grapeseed oil.
